Easy Beef Dinner





Tonight I made beef roll-ups - with feta, spinach and black olives- simmered in diced tomatoes with garlic and onion. So good and easy.









First I pounded the beef cutlets, then put some baby spinach, then feta and diced black olives. Then roll it up and use tooth picks to secure it and fry it up with about 2 tablespoons of Extra Virgin Olive Oil, once browned on all sides add a can of diced tomatoes with garlic and onion. Let it simmer about 20 minutes and serve with sauce over it and fresh bread.
